Lemon-Rind Ginger Snap Cookies

Ingredients:
- 1 cup butter, softened
- 1 cup white sugar
- 1 large egg
- 2 tablespoons molasses
- 2 teaspoons freshly grated lemon rind
- 2 ¼ cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- Additional white sugar for rolling
Directions:
- Preheat oven to 350°F/175°C.
- In a large bowl, cream together the butter and 1 cup sugar until smooth. Beat in the egg, molasses, and lemon rind.
- In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt. Stir the dry ingredients into the molasses mixture until just incorporated.
- Shape dough into 1 inch balls and roll them in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
