Ingredients:

  • 2 ½ cups all-purpose vegan flour

  • ¼ teaspoon baking soda

  • 1 cup vegan butter, cold and cubed
  • ½ cup oat milk
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh strawberries, diced
  • 2 tablespoons vegan white sugar
  • 1 tablespoon cornstarch

Directions:

  1. Preheat oven to 350F. Grease a 9-inch round baking pan and set aside.
  2. In a large bowl, combine vegan flour, sugar, baking powder, baking soda, and salt. Cut in the vegan butter with a pastry blender until mixture resembles coarse crumbs.
  3. In a small bowl, whisk together oat milk and vanilla extract. Pour into the flour mixture and stir just until moistened. Spread the dough into the prepared pan.
  4. Bake for 20-25 minutes, or until the top is lightly golden brown. Let cool completely.
  5. In a medium bowl, combine diced strawberries, sugar, and cornstarch. Stir until the berries are evenly coated.
  6. Spread the strawberry mixture on top of the cooled shortcake.
