Vegan Blood Orange Layer Cake Recipe

This vegan blood orange layer cake is the perfect combination of sweet and tangy. Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 1 cup almond milk
  • 1/4 cup freshly squeezed blood orange juice
  • 3 tablespoons blood orange zest
  • 1/2 cup vegan cream cheese
  • 1/4 cup vegan butter, softened
  • 3 cups powdered sugar

Directions:

  1. Preheat the oven to 350 degrees F. Grease and line two 9-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together the vegan butter and sugar until light and fluffy. Add in the vanilla extract, almond milk, blood orange juice and zest and mix until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Divide the batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool completely before frosting.
  7. To make the frosting, cream together the vegan cream cheese, vegan butter and powdered sugar until light and fluffy. Spread the frosting over the cooled cakes and decorate with additional blood orange zest, if desired.
  8. Serve and enjoy!
