Caramelized Fig Lemon Drizzle Cake Recipe

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1/2 cup milk
  • 4 cups chopped figs
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 1/4 cup powdered sugar

Directions:

  1. Preheat oven to 350°F and grease an 8-inch cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together sugar, oil, vanilla, and eggs until smooth. Gradually add flour mixture, alternating with the milk, until fully combined.
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Meanwhile, in a medium saucepan, melt together figs, brown sugar, butter, and honey over medium heat. Cook, stirring constantly, for 5 minutes.
  6. Remove cake from oven and allow to cool for 10 minutes. Pour caramelized fig mixture over the top of the cake and spread evenly. Allow to cool until the topping has set.
  7. In a small bowl, whisk together lemon juice and powdered sugar until smooth. Drizzle over cake.
