Ingredients:

Cake:
– 2 ½ cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– ¼ teaspoon salt
– 1 cup vegetable oil
– 1 ½ cups granulated sugar
– 2 large eggs
– 2 tablespoons red food coloring
– 1 teaspoon vanilla extract
– 1 cup buttermilk

Cheesecake Filling:
– 2 packages (8 oz. each) cream cheese, softened
– ½ cup granulated sugar
– 2 large eggs
– 2 tablespoons all-purpose flour
– 1 teaspoon lemon juice

Cream Cheese Frosting:
– 4 tablespoons butter, softened
– 1 package (8 oz.) cream cheese, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan with cooking spray.

  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

  3. In a large bowl, beat together the oil and sugar until creamy. Add in the eggs, red food coloring, and vanilla extract. Beat until combined.

  4. Slowly add in the dry ingredients and mix until combined.

  5. Add in the buttermilk and mix until smooth.
