Festive Peppermint Shortbread Cookies

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 cup butter, softened
  • 2/3 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1/2 cup finely crushed peppermint candy pieces
  • 1/4 cup white chocolate chips

Directions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in peppermint extract.
  3. Gradually add in flour, mixing until fully combined. Add in crushed peppermint pieces and mix until evenly distributed.
  4. Turn dough out onto a lightly floured surface and roll out to 1/4-inch thick. Cut out desired shapes with a cookie cutter. Place cookies on prepared baking sheet.
  5. Bake for 12 minutes or until lightly golden. Cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  6. Place white chocolate chips in a microwave-safe bowl. Heat in 15-second increments, stirring in between, until melted and smooth.
  7. Drizzle melted white chocolate over cooled cookies. Allow to set before serving. Enjoy!
  8. Store cookies in an airtight container at room temperature for up to 5 days.
