Festive Peppermint Shortbread Cookies

Ingredients:
- 2 ½ cups all-purpose flour
- 1 cup butter, softened
- 2/3 cup powdered sugar
- 1 teaspoon peppermint extract
- 1/2 cup finely crushed peppermint candy pieces
- 1/4 cup white chocolate chips
Directions:
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in peppermint extract.
- Gradually add in flour, mixing until fully combined. Add in crushed peppermint pieces and mix until evenly distributed.
- Turn dough out onto a lightly floured surface and roll out to 1/4-inch thick. Cut out desired shapes with a cookie cutter. Place cookies on prepared baking sheet.
- Bake for 12 minutes or until lightly golden. Cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
- Place white chocolate chips in a microwave-safe bowl. Heat in 15-second increments, stirring in between, until melted and smooth.
- Drizzle melted white chocolate over cooled cookies. Allow to set before serving. Enjoy!
