Lemon-Sugar Dessert Yorkshire Puddings
This easy to make dessert is the perfect combination of a classic British pudding and a zesty sweet treat. The Yorkshire pudding is made with a lemon-sugar batter, baked in a high-heat oven, and topped with a delicious lemon glaze. Serve this light and fluffy dessert warm and enjoy!
Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon of baking powder
- 1/2 cup of milk
- 1 teaspoon of vanilla extract
- 1/4 cup of melted butter
- 1/4 cup of granulated sugar
- 1/4 cup of freshly squeezed lemon juice
- Zest of one lemon
- Pinch of salt
- For the glaze: 1/4 cup of freshly squeezed lemon juice and 1/4 cup of granulated sugar
Directions:
- Preheat your oven to 450F and lightly grease a 12-cup muffin tin.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat together the eggs, milk, vanilla, melted butter, lemon juice, and lemon zest.
- Gradually add the wet ingredients to the dry ingredients and whisk until fully combined.
- Pour the batter evenly into the prepared muffin tin.
- Bake for 20 minutes or until golden brown.
- While the puddings are baking, prepare the glaze by whisking together the lemon juice and sugar in a small saucepan over medium heat.
- Bring the mixture to a boil and simmer until a thick glaze forms, stirring frequently.
- Remove the puddings from the oven and brush the glaze over the top of each one.
