Coconut Flapjacks with Mango Topping
This delicious recipe is a great breakfast or snack option. The sweetness of the mango topping pairs perfectly with the nutty flavor of the coconut flapjacks. Plus, it’s easy to make and only requires a few ingredients. Enjoy!
Ingredients:
- 1 cup flour
- 1/2 cup shredded coconut
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 teaspoon coconut oil
- 1 mango, peeled and diced
- 1 tablespoon honey
Directions:
- In a large bowl, combine the flour, coconut, sugar, baking powder, and salt. Stir until combined.
- In a separate bowl, whisk together the milk and coconut oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large non-stick skillet over medium heat. Add 1/4 cup of the batter to the skillet for each flapjack and cook for 1-2 minutes per side, or until golden brown.
- Meanwhile, in a small bowl, mash the diced mango until it is a chunky purée. Stir in the honey.
- To serve, top each flapjack with the mango topping.
