This Raspberry White Chocolate Banoffee Pie is sure to impress! Perfect for a special occasion, this decadent dessert is made with a crumbly graham cracker crust, sweet white chocolate ganache, fresh raspberry puree, and a creamy banana topping. It’s sure to be a hit with all your guests!
Ingredients:
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup white sugar
- 1 teaspoon almond extract
- 8 ounces white chocolate chips
- 1 cup heavy cream
- 2 cups fresh raspberries
- ¼ cup granulated sugar
- 2 ripe bananas
- 2 tablespoons butter
- 2 tablespoons light brown sugar

Preheat oven to 350°F. In a medium bowl, combine graham cracker crumbs, melted butter, white sugar, and almond extract. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes.

In a medium saucepan, heat heavy cream over medium-high heat until simmering. Turn off heat and add white chocolate chips. Stir until chips are melted and mixture is smooth. Pour over graham cracker crust and spread evenly.

In a food processor or blender, combine raspberries and granulated sugar. Blend until smooth. Pour over white chocolate layer and spread evenly.

In a small saucepan, melt butter over medium heat. Add bananas and brown sugar. Cook until bananas are soft and mixture is thick and syrupy. Pour over raspberry layer and spread evenly.
