Shrimp and Grits Pie
This classic Southern dish gets a new twist with this Shrimp and Grits Pie. Combining creamy grits, succulent shrimp, and a flaky crust, this dish is sure to be a hit!
Ingredients:
- 1 cup uncooked grits
- 2 cups chicken broth
- 1/2 cup butter
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 lb. medium shrimp, peeled and deveined
- 1/4 cup butter
- 1/2 cup sliced mushrooms
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup white wine
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh cilantro
- 1 (9-inch) prepared pie crust
Directions:
- Preheat oven to 375°F. In a medium saucepan, bring grits and broth to a boil. Reduce heat to low and stir in 1/2 cup butter, cheese, salt, and garlic powder. Cook for 5 minutes, stirring occasionally. Remove from heat and set aside.
- In a large skillet, heat 1/4 cup butter over medium-high heat. Add mushrooms, onion, bell pepper, garlic powder, salt, pepper, and red pepper flakes. Cook for 5 minutes, stirring occasionally. Add shrimp and cook for 3 minutes, stirring occasionally. Add white wine and cook for 1 minute, stirring occasionally. Remove from heat and stir in parsley and cilantro. Set aside.
- Spread cooled grits in the bottom of the prepared pie crust. Top with shrimp mixture. Bake for 15-20 minutes, or until top is golden brown. Serve warm.
