Quiche with Ratatouille and Eggplant and Zucchini
This quiche is the perfect combination of savory and sweet. It is made with a flavorful ratatouille, a combination of eggplant, zucchini, tomatoes, garlic, and herbs; and delicious Swiss cheese. The result is a hearty and comforting dish that is sure to please.
Ingredients:
- 1 9-inch pre-baked pie crust
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 medium eggplant, diced
- 1 medium zucchini, diced
- 1 cup diced fresh tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded Swiss cheese
- 3 eggs, beaten
- 1 cup half-and-half
Directions:
- Preheat oven to 350 F. Grease a 9-inch pie pan.
- In a large skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add eggplant, zucchini, tomatoes, oregano, thyme, salt, and pepper. Cook until vegetables are soft, about 8 minutes.
- Spread the vegetables in the prepared pie pan and sprinkle with cheese. In a medium bowl, whisk together eggs and half-and-half. Pour over vegetables. Bake until quiche is set and golden brown, about 30 minutes.
- Let cool for 10 minutes before cutting. Serve warm.
