Tarragon-Flavored Lobster and Corn Quiche

This decadent quiche is a delicious combination of sweet corn, succulent lobster, and fragrant tarragon. The perfect center piece for a special brunch, this quiche is sure to impress.

Ingredients:

  • 1 9-inch premade pastry crust
  • 2 cups cooked lobster, diced
  • 1 1/2 cups corn kernels
  • 1/4 cup diced onion
  • 4 ounces cream cheese, softened
  • 4 eggs
  • 1 cup heavy cream
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine lobster, corn, and onion.
  3. Spread cream cheese in the bottom of the pastry crust.
  4. Spread the lobster and corn mixture over the cream cheese.
  5. In a separate bowl, whisk together eggs, cream, pepper, tarragon, and salt.
  6. Pour egg mixture over the lobster and corn.
  7. Sprinkle Parmesan cheese over the top.
  8. Bake for 35-40 minutes, or until the center is set.
  9. Let cool for 10 minutes before serving.
