Rich Chocolate Zucchini Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup cocoa powder
  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup grated zucchini
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cocoa powder.
  3. In a separate bowl, mix together the oil, sugar, vanilla, and eggs. Stir in the zucchini.
  4. Slowly add the wet ingredients to the dry ingredients, and mix until just combined. Fold in the chocolate chips and walnuts, if using.
