Oat Flour Pancakes with Blueberry Sauce

Ingredients:

  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon coconut oil, melted
  • 3 tablespoons maple syrup
  • 1/2 cup fresh or frozen blueberries
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon ground cinnamon

Directions:

  1. In a medium bowl, combine the oat flour, baking powder, and salt.
  2. In a separate bowl, whisk together the almond milk, vanilla extract, and coconut oil.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Heat a nonstick skillet or griddle over medium heat and spray with nonstick cooking spray.
  5. Pour 1/4 cup of the batter onto the skillet and cook for 3 minutes, or until the edges are lightly browned.
  6. Flip the pancake and cook for an additional 2 minutes, or until lightly browned.
  7. Repeat with the remaining batter.
  8. To make the blueberry sauce, combine the blueberries, coconut sugar, and cinnamon in a small saucepan over medium heat.
  9. Stir the mixture occasionally until the blueberries have broken down and the sauce is thickened, about 10 minutes.
  10. Serve the pancakes with the blueberry sauce and a drizzle of maple syrup.
