These peanut butter and jelly oatmeal bars are the perfect breakfast or snack option for busy mornings. Ingredients:

  • 1 1/2 cups old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1/2 cup light brown sugar, packed
  • 1/2 cup peanut butter
  • 1/2 cup jelly or jam

Directions:

  1. Preheat oven to 350ºF. Grease an 8×8-inch baking dish with cooking spray and set aside.
  2. In a medium bowl, whisk together oats, flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, combine melted butter and brown sugar until combined. Add oat mixture to the butter mixture and stir until fully combined.
  4. Press the oat mixture into the prepared baking dish. Spread peanut butter evenly over the oat mixture, followed by the jelly. Bake for 20 minutes, or until top is golden brown.
  5. Let cool in the dish for 10 minutes before slicing into bars. Enjoy!
