Crispy Oatmeal Raisin Cookies

Nothing beats a classic crispy oatmeal raisin cookie. This recipe combines the classic flavors of oatmeal and raisins with a light and buttery texture that’s sure to satisfy your sweet tooth. Enjoy them as a snack or dessert, or bring them to your next potluck!

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup (1 ½ sticks) unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Directions:

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat together the melted butter, brown sugar, and granulated sugar until smooth. Add in the eggs, one at a time, mixing until each is fully incorporated. Beat in the vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Add in the oats and raisins and mix until just combined. Use a cookie scoop to scoop the dough onto the prepared baking sheets, leaving at least 2 inches of space between the cookies.
  5. Bake the cookies for 12-14 minutes, or until golden brown. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
