Crispy Oatmeal Raisin Cookies
Nothing beats a classic crispy oatmeal raisin cookie. This recipe combines the classic flavors of oatmeal and raisins with a light and buttery texture that’s sure to satisfy your sweet tooth. Enjoy them as a snack or dessert, or bring them to your next potluck!
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup (1 ½ sticks) unsalted butter, melted
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups old-fashioned rolled oats
- 1 cup raisins
Directions:
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In the bowl of a stand mixer fitted with the paddle attachment, beat together the melted butter, brown sugar, and granulated sugar until smooth. Add in the eggs, one at a time, mixing until each is fully incorporated. Beat in the vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until just combined. Add in the oats and raisins and mix until just combined. Use a cookie scoop to scoop the dough onto the prepared baking sheets, leaving at least 2 inches of space between the cookies.
- Bake the cookies for 12-14 minutes, or until golden brown. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
