Ingredients:

  • 1 cup all-purpose flour
  • 1 cup dark cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup grated carrots
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts
  • 1/2 cup heavy cream
  • 1/2 cup dark chocolate chips

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9-inch round baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix together the vegetable oil, brown sugar, granulated sugar, eggs, and carrots until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the chocolate chips and walnuts.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
