This Cinnamon-Glazed Carrot and Apple Cake is a delicious and nutritious treat. It’s packed with healthy ingredients, including carrots, apples, and cinnamon, plus a sweet glaze that will make your mouth water. This cake is sure to be a hit with everyone!
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 cup peeled and grated apples
- 1 cup chopped walnuts
- 1/2 cup raisins
- 1/2 cup chopped dates
For the Glaze:
- 2 tablespoons butter, melted
- 2 tablespoons milk
- 1 cup confectioners’ sugar
- 1 teaspoon ground cinnamon
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, stir together flour, baking soda, baking powder, cinnamon and salt.
- In a large bowl, beat together oil, white sugar and brown sugar until creamy. Beat in eggs one at a time, then stir in vanilla.
- Gradually stir the dry ingredients into the wet ingredients. Mix in grated carrots, apples, walnuts, raisins and dates.
- Spread batter into prepared pan.
- Bake for 40 to 50 minutes in preheated oven, until a toothpick inserted into the center of the cake comes out clean. Let cool.
- To make the glaze, mix together butter, milk, confectioners’ sugar and cinnamon. Drizzle over cooled cake. Slice and serve.
