Paleo Carrot Cake and Coconut Frosting

This Paleo Carrot Cake with Coconut Frosting is an easy, healthy and delicious dessert that is sure to please. It’s made with almond flour, coconut oil, carrots, and a simple coconut frosting. This cake is perfect for any occasion or just for a sweet treat!

Ingredients:

  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 3 large eggs, lightly beaten
  • 1/2 cup melted coconut oil
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup shredded coconut
  • For the Coconut Frosting:

  • 1/2 cup coconut butter, melted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F and grease a 9-inch round cake pan with coconut oil.
  2. In a medium bowl, whisk together almond flour, baking soda, cinnamon, and salt.
  3. In a large bowl, whisk together eggs, coconut oil, honey, and vanilla extract.
  4. Add dry ingredients to wet ingredients and mix until combined.
  5. Fold in grated carrots and shredded coconut.
  6. Pour batter into prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cake cool completely before frosting.
  8. To make the frosting, whisk together melted coconut butter, honey, and vanilla extract. Spread frosting over cooled cake and sprinkle with shredded coconut.
