Orange and Coconut Layer Cake with Orange Frosting
This orange and coconut layer cake is perfect for any occasion. The layers are made with freshly-squeezed orange juice and coconut, and topped with an orange frosting for a zesty, tropical flavor. The cake is sure to be a hit with your family and friends!
Ingredients:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 2 1/2 cups granulated sugar
- 4 eggs
- 1 cup freshly-squeezed orange juice
- 1 teaspoon orange zest
- 2 cups sweetened shredded coconut
- 2 tablespoons orange extract
- 1 cup whole milk
- 2 tablespoons butter, melted
- 4 cups powdered sugar
- 1/4 cup freshly-squeezed orange juice, plus more as needed
- 1 teaspoon orange zest
Directions:
- Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, until combined. Beat in the orange juice, orange zest, and orange extract.
- Mix in the dry ingredients, alternating with the coconut and the milk. Divide the batter among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, make the frosting. In a medium bowl, whisk together the butter, powdered sugar, orange juice, and orange zest until smooth. Add more orange juice, if needed, to reach the desired consistency.
- When the cake is done, let it cool for 10 minutes before turning it out onto a wire rack to cool completely. Once cooled, frost the cake with the orange frosting and serve.
