Upside-Down Blood Orange Cake

This Upside-Down Blood Orange Cake is a twist on the classic upside-down cake. The tartness of the blood oranges is balanced perfectly by the sweet and creamy cake. It’s an easy recipe that will be a hit at any gathering!

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • ¾ cup buttermilk
  • 2 tablespoons grated blood orange zest
  • 2 tablespoons blood orange juice
  • 4 tablespoons melted butter
  • 1/3 cup packed light brown sugar
  • 2 tablespoons blood orange juice
  • 1 cup fresh blood orange slices

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat together butter and sugar until light and fluffy. Beat in eggs, one at a time. Beat in buttermilk, blood orange zest, and blood orange juice.
  4. Add the flour mixture to the butter mixture and beat until just combined. Pour into the prepared pan and spread evenly.
  5. In a small bowl, mix together melted butter, brown sugar, and blood orange juice. Pour over the cake batter.
  6. Arrange the blood orange slices on top of the batter. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting onto a plate. Serve warm or at room temperature.
