Spinach and Feta Quiche

This spinach and feta quiche recipe is a delicious vegetarian option made with fresh spinach, feta cheese, and eggs baked in a flaky crust. Great for brunch or a light dinner.

Ingredients:

  • 1 9-inch pie crust, unbaked
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 4 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup milk
  • 1 cup crumbled feta cheese
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the spinach and cook until wilted, about 2-3 minutes.
  5. Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
  6. Scatter the spinach and feta cheese over the bottom of the crust.
  7. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  8. Pour the egg mixture into the crust.
  9. Bake for 35-40 minutes, or until the filling is set and the crust is golden brown.
