Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup whole milk, room temperature

Instructions:

  1. Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the softened butter and beat on medium speed for 1-2 minutes, until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract.
  6. Add the dry ingredients in three additions, alternating with the milk in two additions, beginning and ending with the dry ingredients.
  7. Beat on medium speed for 2-3 minutes, until the batter is smooth and well combined.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
