White Chocolate and Macadamia Nut Cookies

This recipe is perfect for those that enjoy the sweet and salty combination of white chocolate and macadamia nuts. Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (12-ounce package) white chocolate chips
  • 1 cup macadamia nuts, chopped

Directions:

  1. Preheat oven to 375 degrees F. In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
  2. Using an electric mixer, beat the butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.
  3. Reduce the mixer speed to low and add in the flour mixture, mixing just until combined. Fold in the white chocolate chips and macadamia nuts.
  4. Drop the dough by rounded tablespoonfuls onto ungreased baking sheets, spacing them about 2 inches apart. Bake until golden brown, about 12 minutes. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  5. Repeat with remaining cookie dough.
