Ingredients:
- 2 cups almond flour
- 1/2 cup cashews, finely ground
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup vegan butter
- 1/2 cup vegan cream cheese
- 1/4 cup pure maple syrup
Directions:
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch round cake pan with coconut oil.
- In a large bowl, combine the almond flour, cashews, baking powder, baking soda, and salt. Whisk to combine.
- In a separate bowl, whisk together the coconut oil, maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Spread the batter into the prepared cake pan. Bake for 25-30 minutes until golden brown and a toothpick inserted into the center comes out clean.
- While the cake is baking, make the frosting. In a medium bowl, whisk together the vegan butter and vegan cream cheese until creamy. Add the maple syrup and whisk until fully combined.
- Once the cake is done baking, let cool for 10 minutes before transferring to a wire rack to cool completely.
