Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, melted
- 1/2 cup vegan sugar
- 1/2 cup vegan milk
- 2 teaspoons vanilla extract
- 2 tablespoons strong brewed coffee
- 1/2 cup vegan cream cheese
- 1/2 cup vegan mascarpone cheese
- 1/2 cup vegan whipped cream
- 1/2 cup vegan chocolate chips
- 1/4 cup vegan cocoa powder
Directions:
- Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, whisk together the melted butter, sugar, vegan milk, and vanilla extract.
- Slowly add the dry ingredients to the wet ingredients and mix until combined.
- Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack to cool completely.
- To make the filling, whisk together the cream cheese, mascarpone cheese, and whipped cream until smooth.
- Place one cake layer on a serving plate and spread the filling over the top.
- Sprinkle the chocolate chips over the top.
- Place the second cake layer on top and spread the remaining filling over the top.
- Sprinkle the cocoa powder over the top.
