Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, melted
  • 1/2 cup vegan sugar
  • 1/2 cup vegan milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons strong brewed coffee
  • 1/2 cup vegan cream cheese
  • 1/2 cup vegan mascarpone cheese
  • 1/2 cup vegan whipped cream
  • 1/2 cup vegan chocolate chips
  • 1/4 cup vegan cocoa powder

Directions:

  1. Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the melted butter, sugar, vegan milk, and vanilla extract.
  4. Slowly add the dry ingredients to the wet ingredients and mix until combined.
  5. Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack to cool completely.
  7. To make the filling, whisk together the cream cheese, mascarpone cheese, and whipped cream until smooth.
  8. Place one cake layer on a serving plate and spread the filling over the top.
  9. Sprinkle the chocolate chips over the top.
  10. Place the second cake layer on top and spread the remaining filling over the top.
  11. Sprinkle the cocoa powder over the top.
  12. Refrigerate for at least 2 hours before serving. Enjoy!
