Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegan butter
  • 1/2 cup coconut sugar
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • 2 tsp ground flaxseed

Toffee Sauce:
– 1/4 cup coconut sugar
– 2 tbsp vegan butter
– 2 tbsp almond milk
– 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350F and lightly grease an 8-inch cake pan.

  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream together the vegan butter and coconut sugar until light and fluffy.

  4. In a small bowl, mix together the almond milk, vanilla extract, apple cider vinegar, and ground flaxseed.

  5. Add the wet ingredients to the dry ingredients and mix until just combined.

  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Meanwhile, make the toffee sauce by combining the coconut sugar, vegan butter, almond milk, and vanilla extract in a small saucepan over medium heat. Bring to a boil and stir until the sugar is dissolved.

  8. When the cake is finished baking, let cool for 10 minutes before inverting onto a plate.

  9. Pour the toffee sauce over the cake and serve. Enjoy!
