Vegan Spiced Pumpkin Cake with Frosting
This vegan spiced pumpkin cake with frosting is a perfect fall treat. Made with pumpkin puree, spices, and vegan butter, this cake is moist and flavorful. Topped with a vegan cream cheese frosting, this cake is sure to be a hit.
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup vegan butter, melted
- 1/2 cup coconut sugar
- 1/4 cup brown sugar
- 1/2 cup plant-based milk
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/2 cup vegan cream cheese
- 1/2 cup vegan butter, softened
- 2 cups powdered sugar
Directions:
- Preheat oven to 350°F. Grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- In a large bowl, mix together the melted butter, coconut sugar, and brown sugar. Add in the milk, vanilla, and pumpkin puree and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- To make the frosting, beat together the cream cheese, butter, and powdered sugar until light and fluffy.
- Spread the frosting on the cooled cake and serve.
