Vegan Spiced Pumpkin Cake with Frosting

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, melted
  • 1/2 cup coconut sugar
  • 1/4 cup brown sugar
  • 1/2 cup plant-based milk
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup vegan cream cheese
  • 1/2 cup vegan butter, softened
  • 2 cups powdered sugar

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In a large bowl, mix together the melted butter, coconut sugar, and brown sugar. Add in the milk, vanilla, and pumpkin puree and mix until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before frosting.
  7. To make the frosting, beat together the cream cheese, butter, and powdered sugar until light and fluffy.
  8. Spread the frosting on the cooled cake and serve.
