Vegan Peanut Butter and Chocolate Cake
This vegan peanut butter and chocolate cake is a perfect dessert for any occasion. It’s made with vegan-friendly ingredients, including almond flour, coconut sugar, and peanut butter, and is topped with a rich and creamy chocolate ganache. Ingredients:
- 2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut sugar
- 1/3 cup vegan butter or coconut oil, melted
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 1/2 cup almond milk
- 2 tablespoons cocoa powder
- 1/2 cup dark chocolate chips
- 1/2 cup coconut cream
- 2 tablespoons maple syrup
Directions:
- Preheat the oven to 350°F. Grease an 8-inch round cake pan and set aside.
- In a large bowl, whisk together the almond flour, baking powder, baking soda, salt, and coconut sugar.
- In a separate bowl, whisk together the melted vegan butter or coconut oil, peanut butter, vanilla extract, and almond milk until combined.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting.
- To make the ganache, place the chocolate chips and coconut cream in a heatproof bowl and microwave for 30 seconds. Stir until the chocolate is completely melted and combined with the cream.
