Vegan Orange-Flavored Cake with Orange Frosting

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons orange zest, plus more for garnish
  • 1/2 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup non-dairy milk
  • 1/4 cup vegan cream cheese
  • 3 tablespoons vegan butter, softened
  • 2 to 3 tablespoons orange juice
  • 2 teaspoons orange zest
  • 3 cups vegan powdered sugar

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour a 9-inch round cake pan and set aside.
  2. In a medium bowl whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl beat together the vegan butter and sugar until light and fluffy. Add the orange zest, orange juice, and vanilla and beat again until combined. Add the flour mixture and non-dairy milk alternately, beginning and ending with the flour mixture. Beat until just combined.
  4. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes before removing from pan.
  5. Meanwhile, for the frosting, cream together the vegan cream cheese, vegan butter, orange juice, orange zest, and powdered sugar. Beat until light and fluffy. Spread over cooled cake and garnish with additional orange zest and enjoy!
