This delicious Vegan Mango Sponge Cake is sure to make your mouth water! It starts with a base of fluffy sponge cake, made with vegan ingredients, and is layered with a sweet and tangy mango filling. Topped with a creamy coconut frosting, this cake is the perfect vegan dessert!

Ingredients:

-1 1/2 cups all-purpose flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon salt
-1/2 cup vegan butter, softened
-1/2 cup granulated sugar
-1/2 cup vegan yogurt
-1 teaspoon vanilla extract
-1/2 cup vegan milk
-2 cups diced mango
-1/2 cup coconut cream
-1/4 cup powdered sugar

Directions:

  1. Preheat the oven to 350°F. Grease and lightly flour an 8-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a large bowl, beat together the vegan butter and sugar until light and fluffy.

  4. Add the vegan yogurt, vanilla extract, and vegan milk and beat until combined.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  8. While the cake is cooling, make the mango filling. In a medium bowl, combine the diced mango and coconut cream and mix until combined.

  9. Once the cake has cooled, spread the mango filling over the top of the cake.

  10. In a medium bowl, combine the powdered sugar and coconut cream and whisk until light and fluffy. Spread the frosting over the mango filling.

  11. Slice and serve. Enjoy!
