Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon

  • 1/2 cup vegan butter, softened
  • 1/2 cup applesauce
  • 1/2 cup light brown sugar
  • 1/4 cup molasses
  • 1/4 cup vegan cream cheese
  • 2 tablespoons lemon juice
  • 2 cups powdered sugar

Directions:

  1. Preheat oven to 350 degrees F. Grease an 8×8 inch baking pan with vegan butter.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the vegan butter, applesauce, and brown sugar until light and fluffy. Add the molasses and mix until combined.
  4. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Pour the batter into the prepared baking pan and spread evenly.
