Vegan Coconut Milktart with Agar-Agar

This delicious vegan coconut milk tart is made with agar-agar, a vegan alternative to gelatin. The sweet and creamy coconut filling is poured into a pre-baked tart shell and chilled until set. Ingredients:

  • 1/2 cup vegan margarine
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 3 tablespoons ice cold water
  • 1 can full fat coconut milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons agar-agar powder
  • 1/3 cup toasted coconut flakes

Directions:

  1. Preheat the oven to 350°F (177°C).
  2. In a medium bowl, mix together the vegan margarine, flour, sugar and salt until the mixture resembles coarse crumbs.
  3. Slowly add the ice cold water, 1 tablespoon at a time, until the dough comes together. Press the dough into a 9-inch tart pan and bake for 20 minutes.
  4. In a medium saucepan, combine the coconut milk, sugar, and vanilla extract. Bring to a simmer over medium heat, stirring constantly until the sugar is dissolved.
  5. Reduce the heat to low and add the agar-agar powder. Simmer for 1 minute, stirring constantly.
  6. Pour the filling into the pre-baked tart shell and chill for at least 3 hours to set.
  7. Serve the tart chilled, topped with toasted coconut flakes.
