Vegan Coconut Cake with Coconut Frosting

This vegan coconut cake is the perfect sweet treat for a special occasion! With a coconut-infused cake and a creamy coconut frosting, each bite is packed with delicious flavor. This vegan cake is sure to be a hit with family and friends.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegan butter, softened
  • 1/2 cup coconut sugar
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 2 tablespoons coconut oil
  • 1 tablespoon coconut extract
  • 3/4 cup coconut cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch round baking pan with coconut oil and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and coconut sugar until light and fluffy. Add in the coconut milk, vanilla extract, shredded coconut, coconut oil, and coconut extract, and mix until combined.
  4. Slowly add the flour mixture to the wet ingredients and mix until just combined. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow cake to cool completely before frosting. To make the frosting, combine the coconut cream, powdered sugar, and vanilla extract in a medium bowl and whisk until light and fluffy.
  6. Spread the frosting over the cooled cake and sprinkle with extra shredded coconut, if desired.
