Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, melted
  • 1 cup coconut sugar
  • 1 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2 cups diced apples
  • 1/2 cup chopped walnuts

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Set aside.
  3. In a large bowl, mix together the melted butter, coconut sugar, applesauce, and vanilla extract. Stir in the dry ingredients until just combined. Fold in the diced apples and walnuts.
  4. Pour the batter into the prepared cake pan and spread evenly. Bake for 40-45 minutes, until a toothpick inserted into the center of the cake comes out clean.
  5. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
