Vegan Cinnamon-Spiced Apple Cake Recipe

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup vegan butter, melted
- 1 cup coconut sugar
- 1 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- 2 cups diced apples
- 1/2 cup chopped walnuts
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Set aside.
- In a large bowl, mix together the melted butter, coconut sugar, applesauce, and vanilla extract. Stir in the dry ingredients until just combined. Fold in the diced apples and walnuts.
- Pour the batter into the prepared cake pan and spread evenly. Bake for 40-45 minutes, until a toothpick inserted into the center of the cake comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
