Vegan Chocolate Peppermint Cake Recipe
This delicious Vegan Chocolate Peppermint Cake is the perfect treat for any occasion! Made with vegan ingredients, it’s rich and moist with a hint of peppermint. Perfect for a special occasion or just to indulge yourself!
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan butter, at room temperature
- 3/4 cup sugar
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 cup vegan dark chocolate chips
Directions:
- Preheat oven to 350°F (175°C). Grease and flour an 8 inch round cake pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
- In a large bowl, cream together the vegan butter and sugar until light and fluffy.
- Add the almond milk, vanilla extract and peppermint extract and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the vegan dark chocolate chips.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
