Vegan Chocolate Peppermint Cake Recipe

This delicious Vegan Chocolate Peppermint Cake is the perfect treat for any occasion! Made with vegan ingredients, it’s rich and moist with a hint of peppermint. Perfect for a special occasion or just to indulge yourself!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, at room temperature
  • 3/4 cup sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup vegan dark chocolate chips

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour an 8 inch round cake pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
  3. In a large bowl, cream together the vegan butter and sugar until light and fluffy.
  4. Add the almond milk, vanilla extract and peppermint extract and mix until combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in the vegan dark chocolate chips.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
