Vegan Chai Spice Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup almond milk
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • For the frosting
    • 1/2 cup vegan cream cheese
    • 1/4 cup vegan butter
    • 2 cups powdered sugar
    • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, cardamom, ginger, nutmeg, and salt.
  3. In a separate bowl, whisk together almond milk, coconut oil, maple syrup, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and whisk until combined.
  5. Pour batter into prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool completely before frosting.
  7. To make the frosting, beat together vegan cream cheese, vegan butter, powdered sugar, and vanilla extract until light and fluffy. Spread over cooled cake.
