Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter, melted
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup vegan milk
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1 tablespoon vegan butter, melted

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan with vegan butter.
  2. In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 cup vegan butter, granulated sugar, baking powder, and salt. Stir in the vegan milk and vanilla extract until just combined.
  3. Spread the batter into the prepared pan and sprinkle with blueberries.
  4. In a small bowl, mix together brown sugar, 2 tablespoons all-purpose flour, cinnamon, and 1 tablespoon melted vegan butter. Sprinkle evenly over the top of the cake.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let cool for 10 minutes before serving.
