Vegan Blueberry Coffee Cake Streusel

Ingredients:
- 2 cups all-purpose flour
- 1/2 cup vegan butter, melted
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup vegan milk
- 1 teaspoon vanilla extract
- 1/2 cup blueberries
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon cinnamon
- 1 tablespoon vegan butter, melted
Directions:
- Preheat oven to 350°F. Grease a 9-inch round cake pan with vegan butter.
- In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 cup vegan butter, granulated sugar, baking powder, and salt. Stir in the vegan milk and vanilla extract until just combined.
- Spread the batter into the prepared pan and sprinkle with blueberries.
- In a small bowl, mix together brown sugar, 2 tablespoons all-purpose flour, cinnamon, and 1 tablespoon melted vegan butter. Sprinkle evenly over the top of the cake.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool for 10 minutes before serving.
