Vegan Avocado Brownies

Ingredients:
- 1/2 cup mashed avocado
- 1/2 cup cocoa powder
- 1/2 cup coconut sugar
- 1/4 cup plant-based milk
- 1/4 cup vegan butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips (optional)
- 1/4 cup vegan chocolate ganache (optional)
Directions:
- Preheat the oven to 350°F and line or grease an 8×8″ baking pan.
- In a medium bowl, mix together the mashed avocado, cocoa powder, coconut sugar, plant-based milk, melted vegan butter, and vanilla extract until combined.
- Add the baking powder, baking soda, and salt, and stir until everything is fully incorporated.
- Fold in the chocolate chips, if using.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the brownies cool completely before cutting into them.
