Vegan Avocado Brownies

Ingredients:

  • 1/2 cup mashed avocado
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/4 cup plant-based milk
  • 1/4 cup vegan butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips (optional)
  • 1/4 cup vegan chocolate ganache (optional)

Directions:

  1. Preheat the oven to 350°F and line or grease an 8×8″ baking pan.
  2. In a medium bowl, mix together the mashed avocado, cocoa powder, coconut sugar, plant-based milk, melted vegan butter, and vanilla extract until combined.
  3. Add the baking powder, baking soda, and salt, and stir until everything is fully incorporated.
  4. Fold in the chocolate chips, if using.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the brownies cool completely before cutting into them.
  8. Top with the vegan chocolate ganache, if desired.
