Vanilla Sheet Cake with Chocolate Fudge Icing

Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, at room temperature
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs, at room temperature
  • 1 cup buttermilk
  • 2 cups semi-sweet chocolate chips
  • 2 cups heavy cream
  • 1/4 cup light corn syrup

Directions:

  1. Preheat oven to 350°F. Grease a 13×9-inch baking pan with butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Beat in the vanilla.
  4. Add the eggs one at a time, beating after each addition. Add the flour mixture in three parts, alternating with the buttermilk, beginning and ending with the flour.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.
  6. To make the frosting, melt the chocolate chips in a double boiler or in the microwave. In a medium bowl, beat the heavy cream and corn syrup until soft peaks form. Fold in the melted chocolate until well combined.
  7. Spread the frosting over the cooled cake and serve.
