Vanilla Sheet Cake with Chocolate Fudge Icing
This classic sheet cake is a crowd pleaser with its moist vanilla cake topped with smooth and creamy chocolate fudge icing. The perfect combination of sweet and delicious, it is sure to be a hit at your next gathering!
Ingredients:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter, at room temperature
- 2 cups granulated sugar
- 2 teaspoons vanilla extract
- 4 large eggs, at room temperature
- 1 cup buttermilk
- 2 cups semi-sweet chocolate chips
- 2 cups heavy cream
- 1/4 cup light corn syrup
Directions:
- Preheat oven to 350°F. Grease a 13×9-inch baking pan with butter or cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Beat in the vanilla.
- Add the eggs one at a time, beating after each addition. Add the flour mixture in three parts, alternating with the buttermilk, beginning and ending with the flour.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.
- To make the frosting, melt the chocolate chips in a double boiler or in the microwave. In a medium bowl, beat the heavy cream and corn syrup until soft peaks form. Fold in the melted chocolate until well combined.
- Spread the frosting over the cooled cake and serve.
