Vanilla Latte-Infused Cake

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup strong espresso or coffee
  • 1/2 cup heavy cream

Directions:

  1. Preheat oven to 350°F (177°C). Grease two 9-inch round cake pans with butter and line the bottoms with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a medium bowl, whisk together the sugar and softened butter until light and fluffy. Add the eggs one at a time, whisking until fully incorporated. Stir in the vanilla extract.
  4. In a small bowl, mix together the espresso and cream. Alternately add the dry ingredients and espresso mixture to the wet ingredients, beginning and ending with the dry ingredients. Beat until just blended.
  5. Divide the batter between the two prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
