Vanilla Cake with Stevia-Sweetened Low-Carb Frosting

Ingredients:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated stevia-sweetened sugar substitute
- 2 teaspoons pure vanilla extract
- 4 large eggs
- 1 cup buttermilk
- 1 cup heavy cream
- 1 cup low-carb sugar-free cream cheese frosting
Directions:
- Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter with an electric mixer until light and fluffy. Add stevia-sweetened sugar substitute and beat until creamy. Add vanilla and eggs, one at a time, beating until fully incorporated. Beat in buttermilk and heavy cream until combined.
- Gradually add the dry ingredients to the wet ingredients, beating on low speed until the batter is smooth. Divide the batter between the two prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
- Spread the frosting over the top of the cooled cake. Enjoy!
