Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated stevia-sweetened sugar substitute
  • 2 teaspoons pure vanilla extract
  • 4 large eggs
  • 1 cup buttermilk
  • 1 cup heavy cream
  • 1 cup low-carb sugar-free cream cheese frosting

Directions:

  1. Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter with an electric mixer until light and fluffy. Add stevia-sweetened sugar substitute and beat until creamy. Add vanilla and eggs, one at a time, beating until fully incorporated. Beat in buttermilk and heavy cream until combined.
  4. Gradually add the dry ingredients to the wet ingredients, beating on low speed until the batter is smooth. Divide the batter between the two prepared cake pans.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
