This recipe is perfect for any occasion. It starts out with a delicious vanilla cake base, then it’s filled with a creamy lemon curd and topped with a light and fluffy mascarpone frosting. The combination of flavors is divine!
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup white sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 cup lemon curd
- 2 cups mascarpone cheese
- 2 tablespoons confectioners’ sugar
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk.
- Divide batter evenly between prepared pans. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow cakes to cool for 10 minutes, then remove from pans and cool completely.
- Spread lemon curd on top of one of the cakes. Place the other cake layer on top.
- In a medium bowl, beat together mascarpone cheese, confectioners’ sugar, vanilla extract, and lemon zest until smooth. Spread over top of cake.
- Serve and enjoy!
