Vanilla Cake with Delicious Lemon Curd and Mascarpone Frosting

This recipe is perfect for any occasion. It starts out with a delicious vanilla cake base, then it’s filled with a creamy lemon curd and topped with a light and fluffy mascarpone frosting. The combination of flavors is divine!

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup white sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup lemon curd
  • 2 cups mascarpone cheese
  • 2 tablespoons confectioners’ sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk.
  4. Divide batter evenly between prepared pans. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow cakes to cool for 10 minutes, then remove from pans and cool completely.
  6. Spread lemon curd on top of one of the cakes. Place the other cake layer on top.
  7. In a medium bowl, beat together mascarpone cheese, confectioners’ sugar, vanilla extract, and lemon zest until smooth. Spread over top of cake.
  8. Serve and enjoy!
