Vanilla Bean Shortbread Cookies Recipe
These Vanilla Bean Shortbread Cookies are the perfect treat to make for your family and friends. They are made with a buttery, crunchy cookie base that is full of vanilla bean flavor. The cookies are easy to make and you can dress them up with a sprinkle of sanding sugar or a few chocolate chips to make them extra special.
Ingredients:
- 2 sticks (1 cup) of unsalted butter, softened
- ¾ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon pure vanilla bean paste
- 2 ½ cups all purpose flour
- ¼ teaspoon salt
- Sanding sugar or chocolate chips (optional)
Directions:
- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add in the vanilla extract and vanilla bean paste, and mix until combined.
- In a separate bowl, mix together the flour and salt. Slowly add the flour mixture to the butter mixture and mix until combined.
- Roll the dough into 1 inch balls and place them on the prepared baking sheet. Press down slightly with the palm of your hand to flatten.
- Bake for 10-12 minutes, or until lightly golden brown. Allow to cool for 5 minutes before transferring to a cooling rack.
- If desired, sprinkle with sanding sugar or chocolate chips.
