Vanilla Bean Cheesecake with Balsamic Strawberries
This delightful dessert pairs the classic sweetness of a vanilla bean cheesecake with the tartness of balsamic strawberries. The creamy cheesecake is baked to perfection and topped with a delicious balsamic strawberry compote that will tantalize your taste buds!
Ingredients:
- 2 8-ounce packages cream cheese, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon vanilla bean paste
- 1/2 teaspoon salt
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted
- 2 cups fresh strawberries, diced
- 1/4 cup balsamic vinegar
- 2 tablespoons white sugar
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until light and fluffy. Beat in eggs one at a time, mixing until smooth. Blend in vanilla extract, vanilla bean paste and salt. Add graham cracker crumbs and melted butter. Mix until combined. Pour into prepared pan.
- Bake in preheated oven for 45 minutes. Turn off oven and let cake cool in oven for 1 hour. Remove from oven and cool completely.
- In a medium saucepan, combine strawberries, balsamic vinegar and 2 tablespoons sugar. Simmer for 10 minutes, stirring occasionally. Let cool.
- Top cooled cheesecake with balsamic strawberry compote before serving. Enjoy!
