Vanilla Bean Cheesecake with Balsamic Strawberries

This delightful dessert pairs the classic sweetness of a vanilla bean cheesecake with the tartness of balsamic strawberries. The creamy cheesecake is baked to perfection and topped with a delicious balsamic strawberry compote that will tantalize your taste buds!

Ingredients:

  • 2 8-ounce packages cream cheese, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon vanilla bean paste
  • 1/2 teaspoon salt
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 2 cups fresh strawberries, diced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons white sugar

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch springform pan.
  2. In a large bowl, beat cream cheese and 1 cup sugar until light and fluffy. Beat in eggs one at a time, mixing until smooth. Blend in vanilla extract, vanilla bean paste and salt. Add graham cracker crumbs and melted butter. Mix until combined. Pour into prepared pan.
  3. Bake in preheated oven for 45 minutes. Turn off oven and let cake cool in oven for 1 hour. Remove from oven and cool completely.
  4. In a medium saucepan, combine strawberries, balsamic vinegar and 2 tablespoons sugar. Simmer for 10 minutes, stirring occasionally. Let cool.
  5. Top cooled cheesecake with balsamic strawberry compote before serving. Enjoy!
