Upside-Down Blood Orange Cake
This Upside-Down Blood Orange Cake is a twist on the classic upside-down cake. The tartness of the blood oranges is balanced perfectly by the sweet and creamy cake. It’s an easy recipe that will be a hit at any gathering!
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup butter, softened
- 1 cup sugar
- 2 large eggs
- ¾ cup buttermilk
- 2 tablespoons grated blood orange zest
- 2 tablespoons blood orange juice
- 4 tablespoons melted butter
- 1/3 cup packed light brown sugar
- 2 tablespoons blood orange juice
- 1 cup fresh blood orange slices
Directions:
- Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat together butter and sugar until light and fluffy. Beat in eggs, one at a time. Beat in buttermilk, blood orange zest, and blood orange juice.
- Add the flour mixture to the butter mixture and beat until just combined. Pour into the prepared pan and spread evenly.
- In a small bowl, mix together melted butter, brown sugar, and blood orange juice. Pour over the cake batter.
- Arrange the blood orange slices on top of the batter. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting onto a plate. Serve warm or at room temperature.
