Tiramisu-Inspired Layer Cake

Tiramisu-inspired layer cake is a delicious, decadent treat. This cake is made with sponge cake soaked in coffee, layered with creamy mascarpone cheese, and topped with a dusting of cocoa powder. Perfect for special occasions or just a treat, this cake is sure to impress.

Ingredients:

  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup freshly brewed strong coffee
  • 2 cups mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/4 cup cocoa powder

Directions:

  1. Preheat oven to 350F. Grease and line two 8-inch round cake pans.
  2. In the bowl of an electric mixer, beat together eggs, granulated sugar, and vanilla extract until light and fluffy, about 5 minutes.
  3. In a separate bowl, whisk together flour, baking powder, and salt. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients and mix until just combined.
  4. Divide the batter evenly between the two prepared cake pans and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans.
  5. Once the cakes have cooled, use a serrated knife to level off the top of each cake layer. Place one layer on a cake stand or plate and brush the top with the coffee.
  6. In the bowl of an electric mixer, beat together the mascarpone cheese, heavy cream, and powdered sugar until light and fluffy. Spread half of the mascarpone cream over the bottom cake layer and top with the second cake layer. Brush the top with the remaining coffee.
  7. Spread the remaining mascarpone cream over the top and sides of the cake. Dust with cocoa powder.
  8. Serve and enjoy!
