Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Thai-style iced tea
  • 1/2 cup milk
  • 1/2 cup butter, softened
  • 4 tablespoon Thai-style iced tea
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F. Line a cupcake pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the sugar and butter until light and creamy. Beat in the eggs one at a time, then add the vanilla extract.
  4. Alternate adding the dry ingredients and the Thai-style iced tea and milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Divide the batter into the prepared cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. To make the icing, beat together the butter, iced tea, powdered sugar, and vanilla extract until light and creamy. Pipe onto the cooled cupcakes.
