Ingredients:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts
- 1/2 cup chopped pecans
- 1/2 cup shredded coconut
- 1/2 cup light brown sugar
- 1/4 cup butter, melted
- 1 teaspoon cinnamon
Directions:
- Preheat oven to 350°F and grease a 9×5-inch loaf pan.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and 1 cup brown sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and mashed bananas.
- Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared pan.
- In a small bowl, combine the walnuts, pecans, coconut, 1/2 cup brown sugar, butter, and cinnamon. Sprinkle the topping evenly over the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
