Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1/2 cup light brown sugar
  • 1/4 cup butter, melted
  • 1 teaspoon cinnamon

Directions:

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and 1 cup brown sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and mashed bananas.
  4. Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared pan.
  6. In a small bowl, combine the walnuts, pecans, coconut, 1/2 cup brown sugar, butter, and cinnamon. Sprinkle the topping evenly over the batter.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
