Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 1 cup tomato juice
  • 1/4 cup vodka
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese
  • 2/3 cup sour cream
  • 1/4 cup chopped fresh parsley

Directions:

  1. Preheat the oven to 350°F (175°C). Grease and flour 24 muffin tins.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. In a separate bowl, combine the tomato juice, vodka, Worcestershire sauce, cayenne pepper, black pepper, and Parmesan cheese. Beat this mixture into the butter and sugar mixture.
  5. Mix the sour cream into the wet ingredients. Slowly add the flour mixture to the wet ingredients, stirring until just combined.
  6. Fold in the chopped parsley.
  7. Divide the batter among the prepared muffin tins. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
