Spicy Bloody Mary Cupcakes with Tomato and Vodka Recipe

Ingredients:
- 2 cups all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 1/2 cups granulated sugar

- 1 cup tomato juice
- 1/4 cup vodka
- 2 teaspoons Worcestershire sauce

- 1/4 cup grated Parmesan cheese
- 2/3 cup sour cream
- 1/4 cup chopped fresh parsley
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour 24 muffin tins.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
- In a separate bowl, combine the tomato juice, vodka, Worcestershire sauce, cayenne pepper, black pepper, and Parmesan cheese. Beat this mixture into the butter and sugar mixture.
- Mix the sour cream into the wet ingredients. Slowly add the flour mixture to the wet ingredients, stirring until just combined.
- Fold in the chopped parsley.
- Divide the batter among the prepared muffin tins. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
